KANPAI was founded in 2016 by married couple Lucy and Tom Wilson, and we are the UK’s first sake brewery. KANPAI means ‘cheers’ in Japanese. We brew British-style sake using traditional Japanese techniques. What started in our spare bedroom is now happily homed in an industrial warehouse up the road in Peckham, South London. 

Sake is brewed like a beer but enjoyed like a wine. At KANPAI, all of our sake is purely fermented from rice, with no added sulphites or preservatives. Our sake is made lovingly by hand, using low interventionist brewing methods, allowing the natural characteristics of each ingredient to shine through.
